hooman pasta and sausage recipe

Baked Rigatoni with Italian Sausage
16 ounce package rigatoni                  24 oz. jar or can of 3- or 4-cheese pasta sauce
1 T. olive oil                                      1 ˝ cup ricotta cheese (cottage cheese?)
1 pound Italian sausage                     1 cup grated Parmesan cheese
1 pound sweet Italian sausage            ˝ cup beef stock
2 T. chopped parsley

1.  Preheat oven to 350 degrees F.  Cook pasta according to package directions: drain and set aside.
2.  In large skillet heat oil and brown sausages evenly.  Remove from heat and cut into thin slices.  (If you use ground sausage, make sure pieces are broken up and browned completely.)  Over low heat, add the broth to the skillet, scraping skillet to get all the crusty bits, and simmer 1 to 2 minutes.  Add the pasta sauce and sliced sausages and simmer over low heat for 10 minutes.
3.  Spoon ˝ of the cooked pasta into a lightly greased 13” x 9” baking dish.  Cover with sausage mixture.  Spread with a layer of ricotta and Parmesan cheese.  Repeat the layering process, ending with a layer of sauce and cheeses.
4.  Bake uncovered at 350 degrees F. for 25 minutes or until the sauce is bubbly.  Sprinkle with chopped parsley, and serve.
Total time: approximately 70 minutes.  Serves 8.
Use caution if you reheat leftovers – microwaving may cause pasta to be tough.

I made it a goal to start preparing some of the recipes I have collected over the last dozen years, about a month ago.  I made an orange chocolate cake, Glenda Burnsides' grandmother's Heaven and Earth Potato Salad, then her Fried Chicken, and this one from a magazine, is for this week... all you need is garlic bread and a salad to make your meal - and some chocolate for dessert.
