Zucchini Chicken Casserole

We are trying this one out tonight...   Smells great... 


                              1~ Medium (2lb.) Zucchini
                              1~ Cup water
                              1/4 ~ Green Onion, chopped

                               Boil for 5 min. Drain; Stir in:


                               1~ Can Cream of Chicken Soup (we used mushroom)
                               1~ Cup shredded carrots
                               1~ Pkg. Stove Top Suffing Mix, mixed ( or make your own stuffing mix)
                               1~ Cup sour cream
                               1~ cooked chicken, deboned ( we used cooked breast meat)


                                Mix together and bake at 350 degrees for 30-40 minutes. 


                                We are also going to put some fresh grated parmesan cheese on at the last 5 minutes of baking.

How did it taste?  Did you chop the Zucchini or shredded it?

We chopped the zucchini into pretty small pieces (bite size).   It was TASTY, YUMMY!!!!   Very good, my kids loved it and we may have to double the recipe next time....         :thumb:
