WHITE CHICKEN CHILI

Here is a recipie for White Chicken Chili that I make.  I put everything in the crockpot and let it cook overnight and through the next day that I plan to serve it.  The house smells so good through the night! The recipie calls for cooked Great Northern Beans but since I cook the chili overnight, I do not precook the beans.

White Chicken Chili

10 cups cooked Great Northern Beans
2 pounds boneless & skinless chicken breast
2 medium onions, chopped
2 ribs celery, chopped
2 4-oz cans chopped mild green chilies
4 cloves garlic, minced
1 Tbsp oive oil
6 cups chicken stock or canned broth
2 tsp ground cumin
1 1/2 tsp dried oregano, crumbled
1/4 tsp cayenne pepper
1/2 tsp black pepper
1/2 tsp white pepper
salt to taste
1/4 tsp ground cloves
3 cups shredded Monterey Jack cheese
Chopped fresh cilantro
Sour cream
Salsa

Simmer chicken in large pot about 15 minutes.  Drain, cool, and cube.  Heat oil in pan over medium high heat and saute onions until translucent. Stir in garlic, chilies cumin, oregano, cloves, salt and peppers (cayenne, black and white) and saute about 2 minutes.

Add sauted seasonings to beans, chicken, and stock in the crock pot and let cook 8 to 10 hours + (like I noted earlier, I cook my chili overnight and into the next day for the wonderful flavor).  (Or if you want to eat it sooner, mix all the ingredients in a stock pot, bring to a boil and then reduce heat and let simmer about 2 hours.  Using the stock pot, you will need to cook the beans first.)

Prior to serving, add 1 cup (or more, if you wish) of the Monterey Jack Cheese to the chili, stir until cheese melts.  Once cheese is melted, it's ready to serve.

Garnish with remaining cheese, sour cream, salsa and cilantro, if desired.

This chili is hit....I've taken it to football tailgate parties, potlucks, and any other occasion!

Sounds delicious.  I must pass this recipe out at work....as a matter of fact...I pass all the recipes from WW out at work and the people I work with just love it!!!  They have tried several.... and every recipe they have tried has gotten the  :thumb:

Wish I got this one earlier. I enterd a chili cookoff here at work and it is tomorrow!! I will be serving along with corn bread. This recipe though would be a sure winner. I will keep it for next year!! Of course and try it this weekend!!
