......I think it was you who put them in a treat box that I was the lucky recipient of one year.  Could you post the recipe, those were delicious.

Mike

What a coincidence, I made a batch last night to take to a dinner tomorrow.  I'll post it when I get home tonight.

When he posted the recipe before I made them and loved them. I'm glad you asked for it again since I'm changing most things over to my laptop and I haven't come across my copy yet. I plan to do some Christmas baking with some friends in the next week or so.

Ok, here it is.

Scottish Shortbread

4 cups   Flour
1 lb.      Butter
1 cup      Sugar
(optional) zest of lemon, orange or lime

Mix flour and sugar (and zest if additional flavoring desired) in bowl.  Add butter and knead until well mixed together, dough should be light, but not crumbly.  Line sheet cake pan with pastry paper and lightly press dough onto paper.  A rolling pin can be careful used to smooth and even out the dough.  Bake at 350 degrees for 20-25 minutes or until light golden brown.  Remove immediately and let cool for 5 minutes.  For decoration, drag a fork across the top to create a plaid design before slicing into cubes.  Let cookies completely cool before removing from pan.

These cookies are personally recommended by Julia, Brekke, and Sandi's Dolly - who has finally been forgiven for snatching one out of my hand, because Brenda shared her batch from Mike!  (Probably recommended by Sandi and her hubby, Mark, as well!)

Yep, Dolly LOVES shortbread cookies!  WOOF! These days, her mommy is sooo busy that no cookies are being made except quick mixes.  Watkins has a good one for the Holiday season....um.....SHORTBREAD COOKIE MIX.  Not NEARLY as good as Mike's but super easy to make and quite tasty.
