Title: Corn Relish

I'm looking for a good corn relish as the sweet corn is now ready to pick and I love corn relish. Anyone have a good one??

Here are two recipes for you. Hope you enjoy!

Old Fashioned Corn Relish

2 cups fresh or frozen corn
2 cups chopped onions
2 cups chopped seeded cucumbers
2 cups chopped tomatoes
1 large green pepper, chopped
1 cup sugar
1 cup cider vinegar
1-1/2 teaspoons celery seed
1-1/2 teaspoons mustard seed
1 teaspoon salt
1/2 teaspoon ground turmeric
Directions:
In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20-30 minutes or until thickened. Store in the refrigerator. Yield: 6-1/2 cups.


Corn Salsa

1 can (15-1/4 ounces) whole kernel corn, drained
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
1/2 cup chopped red onion
1 medium tomato, chopped
1/4 cup sliced ripe olives
2 tablespoons chopped pickled jalapeno peppers
1 teaspoon pickled jalapeno pepper juice
2 tablespoons vinegar
2 tablespoons cider or red wine vinegar
1/2 teaspoon garlic salt
1/2 teaspoon pepper
Directions:
Combine all ingredients in a large bowl. Cover and chill for several hours. Yield: 4 cups.
