CRANBERRY RELISH
1 cup dried cranberries
1 cup orange juice--more or less
1 large orange, use half cut up (each slice into about thirds) and juice the other half
1/8 teaspoon cloves
¼ cup sugarâ€"more or less
¼ teaspoon ground ginger
¼ dried or 1 teaspoon fresh orange peel
1 teaspoon corn starch
Put cranberries in small saucepan with enough juice to cover. (Reserve the rest of the juice.) Let soak for 15 minutes. Meanwhile, add the orange slices and spices. Mix a tablespoon of orange juice with the cornstarch until smooth.
Cook on medium heat and mash with potato masher. If more liquid is needed, add it slowly. Add in the sugar a bit at a time until you achieve the desired sweetness. Cook about 10 minutes and crush the berries well. Add the cornstarch liquid and cook for another 5 minutes. You may need to add more liquid at this point.
When consistency is right put into bowl and garnish with fresh orange peel.
Makes 4 heaping side servings.
This was so good I had it with a leftover lunch and was actually sad when it was gone. I think this might also be nice with a walnut salad. I'm thinking of making it with ginger beer next time.
This sounds EXCELLENT!!! Cranberries and oranges are such a great combination.
