Title: Our traditional Thanksgiving salad - Overnight Salad
Post by: Beth on November 20, 2007, 07:54:23 AM
I love this salad!

OVERNIGHT SALAD
1 big head Iceberg lettuce (if you like lots of lettuce, you can use 2 heads of lettuce)
1 med-lg size onion
1lb. bacon (cut into bits before cooking) You can also used ready-to-eat bacon....just cut and heat!
1 small head cauliflower (broken into small florettes)
1/4 C. sugar
1 1/4 C. mayonnaise
1/3 C. parmesan cheese
salt & pepper to taste

Cook bacon until it is nice and crispy.  Drain.  Tear lettuce into pieces and put in a large bowl.  Thinly slice the onion and layer it on top of the lettuce.  Layer the crumbled bacon on next.  Next, layer the cauliflower.

Sprinkle the sugar over salad.

Add the mayonnaise in spoonfuls (blob it on) on top of the salad.

Sprinkle parmesan cheese over salad.

DO NOT MIX YET!

Cover and refrigerate overnight.

Mix salad just before serving.

That sounds great.  I've been tapped to bring a salad to my Woman's Circle in December and I think I will give this a try.

Thanks
