Title: Very Veggie Soup

I was feeling like I was coming down with something, but I fixed this soup had a couple of bowlfulls, and never got sick.  I pared this down for one person, you can easily double or triple this.

Very Veggie Soup

1 tsp olive oil
1/2 large onion, minced
1 garlic clove, minced
1 carrot, diced
1-1/2 celery stalks, diced
1/4 C diced zucchini
1/4 C diced yellow squash
1 7.5-oz can diced tomatoes
1/4 tsp dried oregano
1/4 tsp dried thyme
1/4 tsp dried basil
1/4 tsp crushed red pepper
2 C low-fat, reduced sodium chicken broth
1 C fresh kale or spinach, coarsely chopped
Salt and pepper to taste.

Heat the oil in a large saucepan over medium heat.  Add onion and garlic and saute for 3 minutes.  Add the carrots, celery, zucchini, and yellow squash and saute for 6 minutes.  Add in the tomatoes, oregano, thyme, basic, and crushed red pepper and cook for 1 minute.  Add in the broth and bring to a boil.  Reduce heat and simmer, uncovered, for 20 minutes.  Add the kale or spinach and cook for 3 minutes more.   Season with salt and pepper.

Makes 3 1/2-cup servings.
