Title: Cookie Exchange
Post by: Frankys_mom on October 19, 2007, 06:12:33 PM
Anyone interested in a cookie recipe exchange???
I'm always looking for new recipes for the holidays.
Here's my "signature" cookie recipe......

Welsh Cookies

5 cups all-purpose flour (not sifted!)
2 cups sugar
2 teaspoons salt
4 teaspoons baking powder
2 1/2 teaspoons nutmeg
1 lb Crisco ( 2 cups or 1 small can)
6 eggs (beaten)
1 cup buttermilk
1 teaspoon baking soda dissolved in 2 Tablespoons water
1lb raisins

1. Put raisins in small pot and add enough water to cover the raisins and bring to a boil.  Drain raisins and allow to cool.
2. Mix dry ingredients and Crisco (mix like pie dough).
3. Add eggs, milk and baking soda/water to the dry ingredient/Crisco mixture and blend well.
4. coat the drained and cooled raisins with flour and blend into the cookie batter.
5. drop by heaping Tablespoons onto greased cookie sheets.
6. Bake at 375 degrees Fahrenheit for 15 minutes until done ( should be golden, not brown).
7. Cool and transfer to wax paper lined storage containers or eat and enjoy!

This recipe makes a boatload of soft cake-like cookies.  I get requests every year to make them. I like the strong nutmeg flavor but tend to use a little less when making them for others.  Be sure to use buttermilk, not regular milk and also be sure that your baking powder and baking soda are fresh or the cookies will not rise.  This is a family recipe that I learned by watching, and I just wrote down what I do, so if something is confusing, let me know.

        Peanut Butter Kiss Cookies!
        1 egg
        1 c.peanut butter
        1 c. white sugar
        Chocalate Kisses
Seperate bowl of sugar for rolling

      Combine ingredients.Roll into 1 inch balls,roll in sugar,bake for 15 minutes @ 350.Push kiss into cookie
after coming from oven but when still warm.

The beginning of Oct the town by where I live has a fall fest the first week-end in Oct and our church has a booth for one day and this year my sister made these cookies and they've been requested for next year already.
