Title: Theme nite dinner menu

I am planning a theme night for when I am feeling better. I am hoping it will be this Sunday. It will be Mexican nite!! The menu I planned is:


Tortilla chips (warm from the oven) and salsa
Shredded Pork Enchiladas with homemade Mole sauce
Refried beans with cheese
Mexican rice
Homemade Fried Ice Cream
Coronas with Lime ( I will skip this part so I don't ruin my recovery)

And the movie for the evening.... Three Amigos!!

Anyone else do Theme nites for dinner. If anyone is interested I can post the recipes.

Oh that sounds like fun!!!   I wouldn't really call it a theme night, but my hubby and I have Friday night pizza and movie night on the last Friday of the month. Its a blast. 
And, the Coronas with lime, my husband wants to know, can he come over for that?   :2funny:  What a fun idea, I'm definately going to have to try your theme night idea sometime.  Very cool!

I would love to know how you do the Fried Ice Cream......and....errrr.......  Can I come for dinner?  :2funny:

I would love to have everyone for dinner!!   :thumb: Of course don't think I will be up to the theme nite this weekend. Want to feel all better to enjoy it. So it will have to be next. That should also give me time to come up with some snazzy decorations!! Wonder what I can dress the pups up as??   :thinik:

I have to admit though I got the recipe for the Fried Ice Cream from Emeril! Here it is:

Fried Ice Cream Recipe courtesy Emeril Lagasse, 2001
Show:  Emeril Live
Episode:  Ice Cream Rules 
 
 
1 quart vanilla ice cream
1 cup crushed frosted cornflakes
1 cup sweetened coconut flakes, or 1 cup chopped walnuts, or 1 cup cookie crumbs
2 large eggs
2 tablespoons sugar
Vegetable oil, for frying
Hot chocolate sauce, optional
Whipped cream, optional

With an ice cream scoop, form 4 large balls of ice cream. Place on a waxed paper lined sheet and cover with plastic wrap. Freeze for at least 2 hours.
In a bowl, combine the cornflake crumbs with either the coconut, walnuts or cookie crumbs (or any combination). Spread the mixture in a shallow dish.
Dip the ice cream balls in the crumb mixture and freeze for 30 minutes.
In a bowl, beat the eggs and sugar. Dip the coated ice cream balls into the eggs, then roll in the crumb mixture, coating completely. Freeze for 1 hour. (If necessary, or for a thicker crust, roll again in eggs and crumbs until the balls are completely coated.)
Heat the oil in a large pot or fryer to 400 degrees F. One at a time, lower the balls into the oil and fry until golden brown, about 30 seconds to 1 minute. Remove from the oil and place in a dessert bowl. Drizzle with chocolate sauce and whipped cream, as desired. Repeat with the remaining ice cream.

About dressing up the dogs, a sombrero for Tuttle would be great, oh yeah and a pauncho.   For Mimi, definatelyan auhentic old Mexico dress white with green and red trim.  That would be the cutest!!   Oh yeah, pictures of them dress up would be required to be posted.   :thumb:

I will have to see what I can do about the costumes!! Great ideas. And of course I will have to get pictures of the feast as well as the pups!! At least I have a week to try to get it together!! Thanks.

Yeah, my house is fun, or crazy don't know which one though.
