Here it is:
GERMAN HAMBURGER NOODLE CASSEROLE
1 lb ground beef
1 tsp salt
1 tsp sugar
Pinch of pepper
1 clove garlic, crushed
8 oz can tomato sauce
4 oz cream cheese
1 cup sour cream
1 small onion, minced
8-12 oz very fine noodles, cooked and drained (I use Angle Hair pasta)
1/4 cup grated sharp Cheddar cheese
Simmer first 6 ingredients for 15 minutes. Mix together cream chees, sour cream and onion to make a creamy sauce. Place in layers in a 2 quart casserole, beginning with noodles, then meat mixture, then sauce. Repeat the layers and top with Cheddar cheese. Cover and let set in refrigerator for a day or overnight. Take out of refrigerator about 3 hours before cooking. Bake at 350 degrees for about 30 minutes.
OK so I add the Cheddar cheese on each layer and lots of it but I am a cheese freak. I usually double the recipe though because I love having it left over for lunch. You can also add more tomato sauce if you like it more saucy which I always do as well. This is just the basic recipe. I have also tried a little cinnamon in the meat mixture. Not much though.
And the beer bread to go with it is great!!
1 can of beer - any kind, I usually use a light beer
3 cups self rising flour
1/2 cup sugar ( you can use less if you want, this is really according to taste but I found the 1/2 cup is the best for me)
Mix all together and place in a greased bread pan. Bake at 375 degrees for 50 to 60 minutes. Refridgerate over night before cutting.
I warm mine up after cutting in foil along side the casserole. I put it in the last 15 minutes. Smear with butter and your good to go.
This is a great make ahead meal for company. All you have to do is pop it in the oven. Plenty of time to spend with friends and family instead of in the kitchen.

I found another recipe that some of you might have seen but it is a good one. Didn't know if I should post it here or start a new thread. But here it is.
Delicious Corn Bread
Mix - 3 Boxes Jiffy Corn Muffin Mix according to receipt on the box
Add - 2 - Cups - Shredded Cheddar Cheese
Add - 1 - 12 oz can - Cream Corn
Add - 1 - cup - finely chopped onion
Add - 1 - small Jar - Diced Pimentos
Add - Chopped Jalapeno pepper to taste

Fry Several Pieces of bacon and crumble in bottom of greased baking dish.
Then place all the ingredients in a 400 deg. Oven for about 40 minutes. Cook longer than the Box Receipt because of all the extra ingredients.

This sounds wonderful. Randy isn't much for casseroles, but Meg and I are always looking for something new to have when he is working. Also, we both take lunch to work, so this will be perfect. I'm making it this weekend, too! The best part-Fall has finally decided to arrive in S.C. After 10+ days of temps in the 80's, upper 80's for a few days, it is in the low 70s today and supposed to stay there for awhile. I didn't think it would ever happen!
Schatzi loves to be in the kitchen when I cook, too. I'll have to look and see if I can find the picture of her with her nose covered in flour or maybe powdered sugar. She had gotten in the trash bag! Randy said she looked like she had been snorting cocaine!

This is a hearty main dish soup!
TORTELLINI SOUP
1 lb. Italian sausage
1 cup chopped onion
2 cloves garlic, minced
3 15oz. cans beef broth
1/2 cup water
1/2 cup red wine, or water
1 15oz. can diced tomatoes
1 cup thinly sliced carrots
1/2 t. basil
1/2 t. oregano
1 8oz. can tomato sauce
1 and 1/2 cups sliced zucchini
1 8oz. Package cheese-filled tortellini or small ravioli
1 T. parsley
1 green pepper cut into 1/2" pieces
Grated parmesan cheese
In 5 quart pot, brown sausage, onions and garlic until tender. Drain off excess drippings. Add beef broth, water, wine, tomatoes, carrots, basil, oregano and tomato sauce. Bring to boil, then reduce heat and simmer uncovered for 30 minutes. Skim fat from soup. Stir in zucchini, tortellini, parsley and green pepper. Simmer covered for an additional 35-40 minutes, or until vegetables are tender. Sprinkle parmesan cheese on top of each serving. Serve with crusty french bread and a nice, dry red wine!
(This soup is a hearty main dish soup, and it freezes well)

Not for crock pot though, or all day cooking, the cheese will separate.
COLBY CORN CHOWDER
6 large potatoes, peeled and cubed
1 tsp. Salt
1 large onion, chopped
1/4 cup butter (margarine if you must)
2 cans (14 3/4 oz.s each) cream style corn
1 can corn, drained
4 bacon strips, cooked and crumbled, or enough bac-o's or other brand bacon bits to equal 4 strips, or some ham cut into cubes
3 cups milk
8 oz.s Colby cheese, or more, cubed
Place potatoes in a Dutch oven or soup kettle: sprinkle with salt and cover with water. Bring to a boil. Reduce heat; cover and simmer until potatoes are tender. Meanwhile in a skillet, sauté onion in butter until tender. Stir in corn and bacon; heat through. Drain potatoes. Add milk; heat through. Stir in corn mixture and
cheese. Serves 12 - 14 servings (about 3 quarts)
Patty, both of those sound great!! I will have to make them soon. I love a good soup. Especially hardy ones that will freeze well.

Sounds like this meal will be made this weekend by a lot of us. I have decided to have it as well. Funny how talking about it makes you crave it!! That will be for Saturday's dinner, Sunday will be a huge roast with garden vegies, rolls, mashed potatoes and a apple crisp desert with vanilla ice cream!! Perfect for a rainy Sunday. And the left over roast can be made into pulled BBQ sammies for lunches and for small little treats for Mimi and Tuttle!! They love roast day. I usually put some of the juice over their food for a special treat.

My folks are up at the family cabin, along with my sister Joan who came for the week to help them close up the cabin. They will finish up Saturday afternoon and then come to my house. I am fixing Spinach Stuffed Chicken Breasts for dinner (there is also cream cheese, mushrooms and green onions in the filling.) Will have to make one without mushrooms and onions for my dad who hates mushrooms, onions and garlic. (Don't tell my dad that there is red onion in the Rhubard Chutney I made, which he LOVES!) We'll also have squash, rolls and carrot/pineapple/apple salad and maybe some Rhubarb Chutney if I still have some left. Dessert will be Pepperidge Farms cookies and home-made Cherry Spumoni. Lots of wine, too. I'm sure the folks will hit the hay early as we have to get up early for the trip to the airport in Anchorage on Sunday morning. My sister is going home to Juneau, AK, and the folks live in Yuma, AZ. They will go home to "summer." Lucky dogs! Sister, however, goes home to weather on the verge of winter. Juneau winters are yucky because the temp hovers right around freezing making for a sloppy mess. Give me minus 20 with its clear sunny skies anyday. Well, maybe a little warmer for our elderly horses is probably better.

Will post the Spinach Stuffed Chicken recipe later. Its very easy to make, and is very impressive, great for company. I am off the the cabin to see if my folks and sister need any help with anything up there, they are closing it down for the winter. Was going to take Willy and Alex, but its blowing like a son of a gun out there, and its +35 out. Too cold to be taking them for a walk, so I will leave them at home. Will only be gone for a few hours. By the way, there are no more leaves on our trees, thanks to this wind! Snow is in the forecast for some areas. But I'm ready. The Mustang has been put to bed for the winter, and the Escape ready to take on the winter driving.

Hearty Ham and Bean Soup
INGREDIENTS
1 pound dry great Northern beans
8 cups water
1/2 teaspoon salt
1 ham hock
1 cup chopped carrots
1/2 stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
1/2 teaspoon ground white pepper
DIRECTIONS
Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.
You can also use less water for a thicker soup or even chicken broth. I soak my beans over night and switch out the water once. Then I use the last round of water for the soup. Hope you like it!!

Did anyone make the casserole this weekend? I'm going to put it together tonight and have it tomorrow night. I was going to have it Saturday night until I read that it needed to refrigerate all day or overnight. That's why it helps when you read the directions ahead of time!!! One day I will learn. I may be 80 by then, but I'll learn.

We had the Comfort Food Casserole tonight and it was great!! I will add a little extra tomato sauce next time, but even without the extra it was wonderful. Meg said it reminded her of a cross between Mac and cheese and baked spaghetti, two of her favorites.

We had the comfort food casserole last night....it was wonderfully delicious!!!! We did double the tomato sauce (I just love a lot of sauce) Hubby LOVED IT...and all my puppies got little nibbles....can't wait to try it again!!! :headbang:
