Here's a recipe from my long-gone days at Western Electric
Sicilian Meat Roll
2 ea Beaten eggs
½ C. Tomato sauce
¾ C. Soft breadcrumbs
2 T. Snipped parsley
½ tsp Dried oregano " crushed
½ tsp Salt
¼ tsp Pepper
1 clove Garlic " minced
2 lbs. Ground beef
4 to 6 oz. Thinly sliced boiled ham
6 oz. Sliced Swiss cheese (or Mozzarella if preferred)
In a bowl, combine the eggs & tomato sauce. Stir in the breadcrumbs, parsley, oregano, salt, pepper & garlic. Add the ground beef " mix well. Put mixture on foil or waxed paper. Pat meat to a 10” x 8” rectangle. Arrange ham slices atop the meat, leaving a small margin around edges.
Reserving 1 slice of cheese, tear up remainder of cheese and sprinkle over ham. Starting from short end, carefully roll up meat, using foil or paper to lift. Seal edges and ends. Place roll seam side down in 13” x 9” x 2” baking pan.
Bake at 350 degrees F. until done " about 75 minutes. The center of roll will be pink because of the ham. Cut reserved cheese slice into 4 triangles and overlap on top of meat. Return to oven until cheese melts (about 2 minutes).
Serves 8

Hmm, how about steamed potatoes with rosemary and butter and green salad (no ice berg lettuce please) with vinigrette?
Sounds yummy. Will go with the potatoes and salad. Maybe some french bread too!!
We should make a weekly recipe post. I have a ton of them and it is always fun to try new ones!! Thanks again for the recipe.
