Pickled Beets?

Does anyone have a good pickled beets recipe? I grew some this year and they are ready to pick. So I am looking for a really quick and easy recipe. I think I grew too much!!

I'll ask one of my co-workers tomorrow. She puts up all kinds of stuff and has lots of easy recipes. I'm trying to learn from her since we now have a freezer. So far it has corn in it, but by the end of the weekend, it will have some wonderful S.C. peaches, grown just 15 miles from here. They are wonderful this year, and after having very few last year due to the late freeze, are being enjoyed immensely!
I'll see what I can find out and get it on here as soon as I can. I'll also see if I can find the website I've used before that has some easy recipes for pickles and jams. It may help.

Thanks!! I appreciate it so much. I have gotten into gardening (ok with a ton of help from Scott) and this year the garden is huge! And we have about 15 cucumber plants! Pickles would be a great thing to do with most of them!!

I know a couple of my co-workers have pickle recipes. One of them has a recipe she got from one of our patients that she said is incredible. The patient brought the pickles to her, and she and her granddaughter almost finished the jar off that night! That's when she decided she had to call and get the recipe. The other co-worker but up 14 jars of pickles just last week.
I'm so excited for you that the garden is doing well. We are in such a drought here this year (again) that most people are having a hard time. That is one reason I'm going up to one of the large local farms today to get some corn for a friend of mine. I got some for myself last week. It's a great way to get local produce, but not have to use the extra water to try to grow it at home. We are hoping this summer's weather pattern changes soon. It has rained some for the last few days, but we really need a few tropical depressions to come through (no damage, just rain!).

We have the opposite problem! Too much rain. Stormed again last night with some tornados as well. I can't believe the garden hasn't been taken out yet! We grew corn this year and already have ears on them!! Even the farmers around here don't have ears yet! I think we should change places!! Now if we can just get mother nature to agree that would be great!!

We have made sun pickles before, but they don't last as long as canned pickles do. Just about a week and that is it. But if there are pickle lovers in the house then they don't get a chance to make it a week!!

I'm still working on getting the recipes for you. In the meantime, here is a link to a recipe for pickled beets that is supposed to be really easy. This site also has other pickle recipes and is also great for demonstrating and explaining techniques for canning, freezing, etc. It is becoming my favorite reference (other than people I know who do this).

Also, my co-worker and her mom made dill pickles this weekend using a pre-packaged mix and white vinegar. She said they cut their cucumbers in spears. She was curious to see if they would stay crisp or not. When she tried them 24 hours later (and I couldn't believe she only had to wait one day) she said they were perfect! That may be the best way to go for dill pickles. She has promised to get the recipe to me for the dill pickles that also have some chili pepper in them. These would be great if you like hot stuff.

Thanks!! I will check out the site!! I am ready to get going on the canning once things settle down for me! I really appreciate your help on this. I am looking forward to seeing the pickle recipe too!!
