Oooey Gooey Butter Cake

OOEY GOOEY BUTTER CAKE
1 stick butter
1 box yellow cake mix
4 eggs
1 cup chopped walnuts or almonds
8 oz. cream cheese
1 16-oz. box powdered sugar

Melt butter over low heat, then dump into a mixing bowl.  Add the cake mix and 2 of the eggs.  Blend together with mixer on lowest speed.  Spread evenly in a 13x9 inch pan.  (I line the pan with parchment first and give a light spray of Pam.  Make sure the parchment over-hangs so you can lift cake out easily when ready to serve.)  Sprinkle with nuts.

Blend the cream cheese and remaining 2 eggs together with mixer on lowest speed until just mixed together, do not whip.  Gradually blend in the powdered sugar.  Pour on top of cake mixture. 

Bake in 325F oven for 35-40 minutes or until lightly browned.  Toothpick will not come out dry, this cake is meant to be sticky.

Note:  I like to make this the day before serving.  It gives it time to settle.  Leave in pan until ready to serve.  Lift out by grabbing onto overhanging parchment and set on cutting board.   Cut into pieces that are approx. 2"x2".  This cake is very, very rich.  Great served with coffee.

Mel, this cake is SO easy, and very good and impressive.  If you set it in the fridge overnight, you can cut it up like bar cookies, its not a tall cake.

I should have said that the nuts are optional.  You could put coconut in place of the nuts, or use both, or use neither.
Being a chocolate person, I have tried making this with a chocolate cake mix.  It was very good also, but I liked it with the yellow cake mix better.
