Make sure that you keep it in the refrigerator when the weather is hot.  I had a small covered honey pot on my kitchen counter and it got moldy!

I have never seen it mold but it has turned into a crystalized rock.  :thinik:

When honey starts to crystallize, just heat it in the microwave until it bubbles, and then let it cool before covering it.  If you use a double boiler, heat until bubbles form, and again, let it cool before covering it.
