Looking for office pot luck dishes for Crock Pot................

.............something hardy and nutritious (meatballs, casseroles, etc.) as lots of people tend to bring in sweets just before Christmas.  Thanks.

I have a crock pot chicken fricasse recipe.  I'll post when I get home (late) tonight.
There's nothing like having a dachshund tongue up your nose at 3 a.m.

Crock Pot Chicken Fricassee

1 can cream of chicken soup
1/2 C. of water
1/2 C. onions chopped
1 t. paprika
1 t. lemon juice
1 t. rosemary
1 t. thyme
1 t. salt
1/4 t. black pepper
4 skinless, boneless chicken breasts
non stick cooking spray

Spray the crock pot with the non-stick spray. Place chicken in the crock pot. Mix remaining ingredients together and pour over chicken. Cover and cook on low for 6 - 8 hours.
1 hour before serving prepare chive dumplings.
3 T. shortening
1 1/2 C. flour
2 t. baking powder
3/4 t. salt
3 T. chives fresh chopped or 2 1/2 T. dried
3/4 C. milk

Mix dry ingredients and cut in shortening. Add chives and milk and mix to combine well. Drop by teaspoons onto hot chicken and gravy. Cover and cook on high for 45 - 60 minutes.


For a potluck, you might try cutting up the chicken breasts into chunks so that it could be ladled out.  Being allergic to all in the onion family, I substitute rosemary for the chives in the dumplings.   MMMMmmmm good.

Chicken Spectacular

3 C cut-up cooked chicken
1 16-oz can cut green beans, drained
2 C cooked rice
1 10 1/2 can cream of mushroom soup
1/2 C mayonnaise
1 6 or 8 1/2 oz can water chestnuts drained and sliced
2 tablespoons chopped pimento
2 tablespoons chopped onions

Combine all ingredients thoroughly.  Pour into greased crock pot.  Cover and cook on high 4-5 hours; low 4-8 hours.

Or, you can go the quick and easy route:  Italian meatballs in spaghetti sauce, or the Little Smokies in BBQ sauce.

Probably not a good potluck recipe, because it only serves 4-6, but pork butterfly chops drenched in cream of mushroom soups, cooked in the crock for 6 to 8 hours is a simple and delicious dinner.

Julia's Ham Chowder

4 or 5 large baking potatoes, scrubbed and diced
1 pound ham steak, cubed
2 - 15 1/2 oz. canned peas (I use Le Seuer)
2 - 10 1/2 oz. cans Cheddar Cheese soup/sauce (I use Campbell's), or 1 jar Carb Options Double Cheddar Sauce

Cook potatoes in enough water to cover, and do not drain.  (My mother suggests using chicken broth, if desired.)  Add ham, peas, and undiluted soup or sauce. Heat thoroughly.

If using a crockpot, I still cook the potatoes first, and pour that into your crockpot.  Add other ingredients and use the automatic turn down feature if you have it.  Otherwise, just put on low heat until ready to serve - at least 4 hours of cooking will blend flavors.
